How to: Dress a Cromer crab

Ever wondered how you could serve up the delicacy of Cromer?
Well now you can, thanks to this step-by-step guide on how to dress a crab like the locals.

Here’s how to do it:
1 Take the claws off (and throw the legs away)
2 Take the “shickle” - the underbody which can also be called the boat or cart - off the bottom
3 Break and remove the side parts of shell
4 Pull out, and throw away, the mouthpiece and organs (which include the Dead Men’s Fingers lungs)
5 With a knife turn the meat over in the shell and pat it down again
6 Take the brown meat from the shickle with a knife and place it in the shell
7 Take the remaining leg tops out of the shickle, remove the meat with the end of a spoon and add meat to shell
8 Cut the shickle into three pieces
9 Pick the meat out with the end of spoon and put on top of shell
10 Break the claw arms in half and put meat into shell
11 Smash claws with the knife handle and remove the meat on each side using the blunt side of the blade
12 Add the reddish claw meat to top of the dressed crab as a finishing touch
13 Take the meat from the claw “knuckle” using the spoon handle and add to finished crab
14 Enjoy eating it (with a squeeze of lemon, some brown bread and butter and mayonnaise).
